Passionfruit Chia & Meringue Christmas Cups
If you’re after an easy but impressive festive dessert (or breakfast that feels like dessert), this one’s for you. Tangy passionfruit chia pudding layered with fresh passionfruit and crunchy meringue is basically Christmas in a glass 🎄✨

Ingredients

6 tbsp Good Puddings Passionfruit Chia Mix

1⅓ cups milk of choice (coconut milk works beautifully here)

2–3 fresh passionfruit, pulp scooped out

2–3 meringues, lightly crushed

Coconut yoghurt or vanilla yoghurt (optional, for layering)
Method

Make the chia pudding
Add the Passionfruit Chia Mix and milk to a bowl or jar. Stir well, wait 2 minutes, then stir again to prevent clumps. Cover and refrigerate for at least 2 hours or overnight until thick and creamy. -
Layer it up
Spoon a layer of chia pudding into glasses or jars. Add a drizzle of fresh passionfruit pulp, a sprinkle of crushed meringue, and a spoonful of yoghurt if using. -
Repeat & finish
Repeat the layers until the glasses are full. Finish with extra passionfruit pulp and a generous crumble of meringue on top. -
Serve
Serve chilled straight from the fridge. Best enjoyed fresh so the meringue keeps its crunch.
